Banana Cake with Cadbury Giant Buttons

Have ready a greased and lined 900 g loaf tin. Preheat the oven to 160 °C fan, 180 °C conventional, gas mark 4.

Make the Banana Bread: Put the butter and caster sugar into a bowl and whisk together until light and fluffy. Gradually whisk in the eggs. Add the flour and baking powder and fold in gently until thoroughly combined. Then fold in the mashed bananas and chopped Buttons.

Spoon the mixture into the lined tin and level the surface. Bake immediately for about 50-60 minutes or until well risen and golden brown. After 30 minutes if the loaf is browning to fast, cover the surface with foil, for the rest of the cooking time. A skewer inserted into the middle of the loaf should come out clean, if it is fully cooked. Leave to cool in the tin for 10 minutes, then remove from the tin and cool on a wire rack.

Whilst the cake is cooling make the icing. Mix the icing sugar with enough lemon juice to make a thick glace icing. Pipe or drizzle the icing across the top of the loaf. Leave to set before serving in slices.

- 60 g Cadbury Giant Buttons, roughly chopped
