Vegan Brownies with OREO® Crumb

METHOD

Pre heat the oven to 180c (fan). Melt the butter and add in the wet ingredients (water, coffee, and vanilla).

Sift the dry ingredients together (flour, cocoa powder, sugar, baking powder, salt).

Stir the dry ingredients into the wet ingredients until fully smooth.

Line a baking sheet and add the brownie mix, bake for 25 minutes.

To make the butter cream, add softened vegan butter and slowly add icing sugar until thick with an electric whisk. Make fluffy by adding 1/2 tbsp of water at a time up to 2 tbsp.

To make the ganache, melt the chocolate and butter and stir together.

When the brownies are fully cooled, add the butter cream, ganache and top with halved OREO® biscuits and OREO® Crumb.

Allow to set in the fridge for an hour before serving.

- 300 g caster sugar
- 0.5 tbsp baking powder
- 0.5 tbsp salt
- 200 g vegan butter block
- 230 ml brewed coffee
- 115 ml water
- 1 tbsp vanilla essence
- 300 g OREO® Bites
- Buttercream Ingredients:
- 50 g vegan butter
- 250 g icing sugar
- 2 tbsp water
- Ganache Ingredients:
- 170 g dark vegan chocolate
- 115 g vegan butter
- Topping:
- 12 OREO® biscuits
- 1 handful OREO® Crumb
